From Sesteadero to Olive Paradise: The Fascinating History Behind Our "Cerro de las Vacas" Oils

Have you ever wondered why a piece of land has a specific name? In the rural world, names are no coincidence; they tell stories that span centuries.

Today, we invite you on a journey through time to discover the origin of one of our most beloved plots in Montoro: the "Cerro de las Vacas" (Hill of the Cows), and why it is the perfect cradle for our oils.

An Oasis of Comfort for Cattle

To understand the name, we must look back centuries, when the Sierra Morena and the Guadalquivir valley were lands of grazing and transhumance. This hill was not just any place. For cattle, it was a natural "five-star hotel."

Why did they choose it? Through pure instinctive intelligence:

  • The Perfect Microclimate: As a hill, it offered constant ventilation, a crucial relief during the Cordovan summers. Its shady slopes (facing north) and the shade of centennial holm oaks created a cool, protected resting place.

  • Rich and Nutritious Pasture: The moisture retained on its slopes favored more durable and higher-quality grassland. Furthermore, generations of cows resting there fertilized the soil naturally, creating extraordinarily rich earth.

Over time, shepherds and farmers began to refer to this strategic point simply as "the hill where the cows are," establishing the toponym that today, centuries later, we continue to use with pride.

The "Terroir": Where History Becomes Flavor

Today, those same cows have given way to our olive trees. And it is here that the magic of terroir happens.

That historic soil, hyper-nourished by centuries of grazing, fused with the slate and clay of Montoro, gives our oil unparalleled structure and complexity. The Arbosana, a variety delicate by nature, is transformed in this microclimate:

  • Aromas: The Andalusian sun and the hill's ventilation concentrate its notes of green grass and tomato.

  • Character: The earth injects it with an indomitable personality, with a subtle and elegant bitterness and pungency that "speak with a Cordovan accent."
